Veggie Marinara Spaghetti

A great way to make your family eat veggies is spaghetti😉 you can add all the nutritious vegetables and no body will make faces if it’s in this form. In fact sometimes when I am making it for my daughter I add puréed vegetables(even spinach, broccoli, bottle gourd😉)

We choose durum wheat(suji) or whole wheat spaghetti which is easily available these days, to avoid refined flour. So, it becomes a super healthy and quick recipe.

Marinara is a name for Italian style pasta sauce made with tomatoes, basil, garlic and onion. In this recipe I did not prepare the sauce separately but made in the same pan of vegetables to make it quickly. I usually do the same to mostly all my pasta dishes😉

Ingredients:

  • 250 grams durum wheat or whole wheat spaghetti
  • 2 tbsp olive oil
  • 1 cup fine sliced onions
  • 1 tsp garlic paste
  • 1/2 cup cleaned and sliced mushrooms
  • 1/4 cup broccoli florets
  • 1/4 cup corn kernels
  • 1/4 cup chopped basil with stalks + a few leaves reserved for garnish
  • 1 cup tomato puree
  • Salt to taste
  • 1 tsp black pepper
  • 1 tsp dried oregano
  • 1 tsp chilli flakes

Process:

  • In a deep vessel boil enough water to cook the spaghetti, when it comes to boil add some salt, 1 tbsp oil mix and add the spaghetti. Cook it as per the packet instructions usually 10-12 Minutes. Then strain and keep aside 

  • Par boil broccoli and corn, keep aside. You can use any vegetables of your choice 

  • In a pan heat 1 tbsp olive oil and add sliced onions, cook for a minute and add mushrooms, cook till all the water from mushrooms is gone 

  • Add garlic and chopped basil and cook for 2-3 minutesIMG20170325211858

  • Now add salt pepper, dried oregano and chilli flakes, mix well and add cooked spaghettiIMG20170325213402
  • Mix everything well and cook for another minute
  • Serve with some fresh torn basil leavesIMG_20170325_213745
