Rogan Bharwa Shimla Mirch

On our recent trip to Coorg we were served this dish in the dinner buffet, on tasting it I decided then and there that it is a must try on returning home😃 I tried and it came out so well and yum, everyone at home loved it. It is definitely going to my Daily Menu as it is yummy and doesn’t take much time to be cooked.

Believe me it’s a must try if you are bored with your daily choice of veggies. Here comes the Recipe:

Ingredients:

For Capsicum Rings:

  • 3 green capsicums(or you can use your favorite color as well)
  • 250 gms crumbled cottage cheese(paneer)
  • 1 tsp garlic paste
  • 1/2 tsp ginger paste
  • 1 medium onion chopped
  • 1/4 cup chopped capsicum
  • 1/2 cup tomato puree
  • Salt to taste
  • 1 tsp chilli powder
  • 1/4 tsp turmeric powder
  • 2 tsp coriander powder
  • Few chopped stalks of coriander
  • 1 tsp oil
  • 1 tbsp butter

heat 1  Gravy:

  • 1 pc Star Anise
  • 1 small stick of cinnamon
  • 1-2 small bay leaves
  • 1 tsp garlic paste
  • 1/2 tsp ginger paste
  • 3/4 cup onion paste( two medium onions’ paste)
  • 1/2 cup tomato puree
  • Salt to taste
  • 1 tsp chilli powder
  • 1/2 tsp turmeric powder
  • 2 tsp coriander powder
  • 1/2 tsp garam masala powder
  • Few Chopped coriander leaves(for garnish)
  • 1 tsp oil
  • 1 tbsp fresh cream
  • 1/2 cup milk

Process:

For Capsicum Rings:

  • First of all cut the capsicum in shape of rings, remove seeds and clean it while doing so. Now marinate these rings with some salt and pepper and keep aside
  • In a pan heat 1 tsp oil and add ginger garlic paste and Cook for a minute, then add chopped onions, let them cook till they become translucent
  • Add chopped capsicum and cook for 3-5 minutes, then add tomato puree
  • Add the dry spices and stir well, let it cook till all the water from tomatoes is absorbed
  • Now add crumbled cottage cheese and Coriander stalks and mix well, cook till all the water from paneer is absorbed. It will take some 3-4 minutes
  • Now take it off the flame and let it cool down a bit, then make it all a fine paste by churning in your food processor for a minuteIMG20170406202644
  • Now just fill the capsicum rings with this paste and toast them from both sides on a hot griddle with butter, cover to cook if needed. They can be baked as well for 8-12 minutes on 200 degrees, till you see the crust on top
  • Take out in a plate and keep aside

For Gravy:

  • Heat a tsp oil in a pan and add the whole spices(star anise, cinnamon and bay leaves). Let them crackleIMG20170406210246
  • Add ginger garlic paste, cook for a minute till golden brown and then add onion paste. Cook the onions on medium flame till they are brown and look nicely fried, it takes time but adds lots of flavor to the gravy
  • Now add the tomato puree and the dry spices
  • Cook well till all water of tomatoes is absorbed, then add 1 tbsp fresh cream and 1/2 cup milk and cook for 3-4 minutes.IMG20170406213530

For serving:

  • First pour the gravy in the dish and then carefully put the capsicum rings
