Mexican Veggie Quesadilla

On demand of my husband, made some Veggie Quesadilla for lunch today. Quesadillas are Mexican Tortilla Sandwiches and like any other sandwich they are an opportunity to feed veggies to your kids😉 I have loaded them lots of vegetables and both my kids had them happily🤗 yes my husband is my first child, he is very choosy when it comes to food. So, I am always finding ways to feed vegetables to both kids. And when I got a demand for Quesadillas, I was sure that I have to add lots of veggies😉

Though Tortillas are easily available in market but I have made them at home(See recipe here – Home made Wheat flour Tortillas). Traditionally Quesadilla is served with some refreshing Mexican sides, we had them with some Roasted Vegetables, Mexican Tomato Salsa and some Pineapple Salsa.

Here is a very easy recipe of veggies Quesadilla for you:

Ingredients:

  • 8 Wheat flour Tortillas
  • 1 tsp olive oil(or any vegetable oil)
  • 3-4 tsp butter
  • 1/4 cup chopped onion
  • 1/4 cup chopped carrots
  • 1/4 cup chopped capsicum
  • 1/4 cup chopped french beans
  • 1/4 cup chopped red bell pepper
  • 1 tbsp chopped jalapeno pepper
  • Handful corn kernels
  • 4-5 button mushrooms chopped
  • Handful small florets of broccoli
  • 1/2 cup chopped tomatoes
  • 1 tsp chopped garlic
  • 1 tsp chilli powder(Kashmiri Lal Mirch or cayenne pepper)
  • 1 tsp black pepper powder
  • 1 tbsp dried oregano
  • Salt to taste
  • 1 cup shredded cheese of your choice

Process:

  • Heat 1 tsp oil and 1 tsp butter in a pan and add chopped onion, cook it for a minute till it becomes pink and add capsicum, beans and carrots
  • Cook them for 2-3 minutes and add mushrooms and corn, let it cook on medium flame for some time till mushrooms’ water is cooked offIMG20170415131223
  • Then add broccoli and garlic, mix well and let cook for another 3-4 minutes. Add red bell pepper stir well
  • Add all the dry spices and mix well, add chopped tomatoes mix and take off the flame
  • Once the filling is ready heat a griddle with some butter and place one tortilla over it
  • Spread some cheese over the tortilla and then spread about 2 tbsp of the filling evenly on it , again spread some more cheese and then cover it with another tortilla
  • Cook it on both sides till it becomes a bit crunchy, repeat this with all other tortillasIMG20170415143915

It is a complete meal served with some refreshing salads. I especially love the Pineapple Salsa😍

    Yaar ur recipe is very easy to understand…I need to ask one more thing that along with Quesadilla & Pineapple salsa there is a sautéed veg also..please share recipe of this also.
