Roasted Vegetables in Mexican Spices

This is my First Recipe on Demand on this blog, dedicated to an old friend Pratibha😊

This one is a very easy to make but super healthy vegetable salad recipe. Vegetables are Roasted in mild Mexican style spices. Its charm is in its simplicity as it retains the original taste and juices of vegetables. You can prepare this even as a side dish with your curries or Dal, or have it on its own with some bread😊


  • 1 Green bell pepper chopped in big chunks
  • 1 Red bell pepper chopped in big chunks
  • 1 yellow bell pepper chopped in big chunks
  • 1 cup halved Button Mushrooms
  • 1/2 cup broccoli florets
  • 1 cup cottage cheese cubes
  • 1 tbsp roasted cumin powder
  • 1 tsp cayenne pepper(you can even use Kashmiri Lal Mirch- the idea is to have more color than spice)
  • 1 tsp black pepper
  • 1 tbsp dried oregano
  • Salt to taste
  • 1 tbsp olive oil


  • Prepare your Vegetables and cottage cheese and add to a bowl( you can use your favorite veggies)
  • Add oil and dry spices in bowl and mix well so that all vegetables are quoted with spice and oilIMG20170415141541
  • Leave them for 15-20 minutes, in this time preheat your oven at 200 degrees
  • Now pop them in the heated oven for 20-22 minutes till you see the roasted golden marks on cottage cheeseIMG20170415143543
  • You can even make them in a pan on high heat by continuously stirring.IMG20170415145416
