Rose Buns with Amaranth Leaves and Wheat Flour

I have realised that feeding vegetables to my family and myself ๐Ÿ˜‰ is quite a task and I keep on trying new things for being able to do so. I saw someone making Rose Buns on you tube recently and decided to give it a try. I also had some fresh Amaranth Leaves lying in my fridge. Amaranth aka Cholai aka Laal Palak or Rajgira is a super food, rich in iron, vitamin and minerals. Sometimes, I make it with Pumpkin or Dal but then my daughter would just not eat them๐Ÿค” So I add it in some hidden form to few of my dishes. And this time made these Beautiful Buns with it๐Ÿ˜‰๐Ÿ˜Š


To my delight my daughter loved them and had one as soon as she saw them out of the oven. She loved the crispy edges very much. These buns are mildly sweet and very soft inside, and the crispy edges are adding to the charm.


  • 2 cups Whole wheat flour
  • 2 tsp instant yeast
  • 2 cups lightly packed fresh Amaranth Leaves
  • 2 tbsp butter
  • 4 tbsp sugar(optional)
  • 1/2 tsp salt or to taste
  • Warm water as required for kneading the dough
  • Water for blanching Amaranth Leaves
  • Oil/butter for greasing


  • Wash the Amaranth Leaves very well to remove all the dirt and then blanch them. Put them in a pot of boiling water for a minute and strain, pour cold water over them to stop cooking
  • Puree the blanched amaranth leaves in a food processor, keep aside
  • Take the flour in a bowl, add yeast, sugar and salt to it and mix well( if you are using instant yeast, first prove the yeast with some sugar in 1/4 cup warm water and use that water to knead the dough)IMG20170531132849

  • Now add water little by little to make a soft and smooth dough. Knead for 2-3 minutesIMG20170531133615
  • Now add the butter and knead the dough well to incorporate butter in itIMG20170531133632
  • Now keep the dough covered in a greased deep bowl at some warm place for an hour or till the dough doubles in size
  • Take out the dough, knock the air out and make 32 equal size balls with this. Dividing the dough like the image is helpful in getting equal sized balls
  • With the help of some dry flour start rolling each ball in a small circle
  • Now take four dough circles and arrange them overlapping as in the imageIMG20170531143310

  • Start rolling one part first and roll completely
  • Keep this roll on the other part of circles and again roll the full length
  • Spread the leaves of the rose a little bit with your fingersIMG20170531143500

  • Grease your muffins tray with some oil or butter, keep the roses in the tray and brush them with some butter and allow to rest for 10 minutes
  • Meantime, preheat the oven at 180 degrees
  • Bake the Buns at 180 degrees for 18-22 minutes, keeping an eye after 18 minutes till you get a nice crispy looking color on top.IMG20170531155454

Let them cool a bit and serve in breakfast or as a snack. They made a great evening snack for us and our daughter ๐Ÿ˜ƒ๐Ÿ˜ƒ๐Ÿ˜ƒ
