Dum Paneer Kali Mirch

On weekends having elaborate and special food is almost a necessity at my place 😊 But on some lazy weekends they have to be special but quick at the same time so that I can also catch up some rest. This Paneer recipe is a delicious elaborately flavored delicacy which is absolutely yummy and gives you quite a break from the regular paneer gravies.

The gravy has a prominent taste of freshly ground black pepper and is cooked in its own steam that’s why the name ‘Dum Paneer Kali Mirch.’


  • 200 gms Paneer
  • 2 medium sized onions(roughly chopped)
  • Handful of cashews
  • 1 & 1/2 tsp garlic paste
  • 1 tsp ginger paste
  • 1/4 cup curd
  • 1 tbsp fresh cream(Malai)
  • 1 bay leaves
  • 1 star anise
  • 1 small cinnamon stick
  • 1 tsp whole cumin
  • 1 tsp roasted cumin powder
  • 1 tsp Coriander powder
  • 1/3 tsp garam masala
  • 1 & 1/2 tsp freshly ground black pepper + 1/2 tsp for quoting the paneer
  • Salt to taste
  • 2 tbsp oil


  • Heat a tbsp oil in a pan and add the roughly chopped onion, cook till they turn golden brown and take out in a blender jar
  • Meanwhile, cut the paneer in large flat cubes(or any shape that you like) and quote with salt and pepper for some timeIMG20170604132750
  • In the same pan cook the cashews till they are nice and golden and take out in the same blender jar
  • Now, add some milk/water to the blender containing onion and cashews and make a fine paste
  • In the hot pan add a tsp oil and add bay leaf, star anise, cinnamon stick and cook till fragrant then add cumin and let it crackle
  • Now add the ginger garlic paste and Cook for a minute then add the onion and cashew paste cook for a minute
  • Side by side heat a grill pan/electronic grill maker and put the paneer with some oil over it to get some nice grill marks, it takes time so be patient, about 4-5 minutes on each side
  • Coming back to the gravy, add some water to the jar in which you had blended the onions and cashew, swirl and put that water to the cooking pasteIMG20170604135111

  • Now take out the whole spices and discard
  • Mix the curd and cream in a bowl and add to the gravy, mix
  • Finally add the star of the show ‘freshly ground black pepper’😊 and mixIMG20170604140103
  • Now cover the pan and let it cook for some time like 4-5 minutes in its own steam(Dum)
