Pumpkin & Crunchy Spinach Subzi

I often feel bored with the choice of vegetables that I make daily.  Gourmet food can not be made daily but one can definitely make some interesting changes to daily food to make it stand out in taste 😉 That is exactly what I am working on very seriously these days. I am on an experimental mode with our daily food, thanks to my accommodating Husband😊

Making a boring Kaddu(pumpkin) more interesting is a challenge and I have well taken it😉 saying so because I loved our today’s lunch😊 I got this idea from Chef Harpal’s show on Food Food channel. And this one is really amazing, if you are struggling to decide what to cook today give this a try, it’s a nice change from routine and very tasty.

Ingredients:

  • 1/2 kg pumpkin(skin removed and chopped in small dices)
  • A small bunch of spinach leaves(washed and cut in strips)
  • 1-2 whole dry red chillies
  • 1 tsp Coriander seeds
  • 1 tsp mustard seeds
  • 1 & 1/2 tsp fine chopped garlic
  • 1 tsp fine chopped ginger
  • 1 medium onion fine chopped
  • Salt to taste
  • 1 tsp red chilli​ powder
  • 1 tsp Coriander powder
  • 1/2 tsp Turmeric powder
  • 3-4 tbsp scraped coconut(fresh/dry both will work)
  • Juice of half lemon
  • 2 tsp oil

Process:

  • Heat the oil in a pan and add red chillies, coriander seeds, mustard seeds, let them crackleIMG20170607072925
  • Add onions and saute for a minute, then add ginger and garlic and cook for some 2-3 minutes 

  • Add pumpkin and mix well, cover and let it cook for 5-7 minutes till the pumpkin is three forth cooked, make sure you don’t overcook otherwise it will become mushy 

  • Add spinach and dry spices and mix well, cook for a minute 

  • Now add scraped coconut and lemon juice and mix wellIMG20170607075054

Isn’t it a combination of beautiful flavors😊 Freshness of coconut, and crunch of  spinach gives the boring Kaddu a whole new dimension. Gives this simple soulful recipe a try, you are surely going to win hearts😍
