Mango Chia Parfait

Eating mangoes is a delight every time but if it is combined with a super food like Chia it becomes even more delightful 😊 Health benefits of mangoes are so many on their own and Chia combined with them makes it a Super Healthy Breakfast/Dessert or whatever you want to call it😉 This is a very simple 3 step recipe of a powerful parfait to fill your day with energy.

Ingredients:

  • 1/2 cup Chia seeds
  • 2 cup cold coconut milk/normal milk/water
  • 2 large mangoes
  • 1/2 tsp vanilla extract
  • 4-5 tbsp honey
  • Some chopped nuts

Process:

This is a very easy recipe with just three steps involved :

  1. Soak the Chia seeds in coconut milk/water with vanilla and 2-3 tbsp honey. Adjust the sweetness as per your taste. Mix well and put it covered in the fridge for minimum 4-5 hours 

  2. Peel and chop the mangoes, remove their seeds and puree with honey, again check for sweetness as per your taste and mangoes. Keep in fridge to chill for some time 

  3. Take out both the chilled puddings and layer them in your serving glasses starting with mango puree. Garnish with some chopped nuts and it’s done😊 

Enjoy it chilled with your family and loved ones. It is very simple to make but full of health, adding coconut milk or some scraped coconut adds a lot of flavor to this. In fact you can make it the same way with your favorite fruits, how cool is that🤗
