Sprouted Ragi Almond Cookies

Ragi is fairly new to me, before the birth of my daughter I didn’t even know about it. But in my quest of searching healthy food for her I found this powerhouse Millet 😊 Ragi is a great source of easy absorb calcium. Now I make many things with Ragi like Dosa, pancakes, Cupcakes, cookies and all, for my little girl as well as whole family. This time it’s these lovely cookies

Ragi is enriched with fiber, calcium and vitamin D on its own but Sprouting enhances its qualities. Generally I buy ready-made Ragi flour but this time I tried sprouting whole Ragi at home. It came out great and gave me full satisfaction as far as purity is concerned 🤗

For sprouting Ragi, wash it properly and soak in some water for 3-4 hours, and then strain the water and tie it in a kitchen towel and leave at room temperature for 12-24 hours. It sprouts very well and the time taken to sprout depends on weather. After they are sprouted let them dry under fan or in sunlight. After drying prepare the flour by churning it in food processor. Sieve properly and use🤗

Now let’s take a look at the recipe of cookies:

Ingredients:

  • 1/2 cup sprouted ragi flour
  • 1/2 cup whole wheat flour
  • 1/4 cup coarsely powdered almonds
  • 1/2 cup cane sugar(I have kept it light on sugar, but you can use up to 3/4 cup of sugar)
  • 1/2 cup butter
  • 1-2 tbsp milk
  • Few chopped almonds for decorating

Process:

  • Cream together butter and sugar till it’s pale and fluffyIMG20170912090200

  • Then sieve over it both Ragi and whole wheat flour and mix well 

  • Add milk and mix, if needed add some more milk to make it a nice pipe-able dough, or else you can directly frame round cookies and bakeIMG20170912090457.jpg
  • If you wish to pipe cookies, fill the piping bag with this mixture and pipe using a start nozzle and decorate with chopped almonds 

  • Bake in a preheated oven at 180 degrees for 12-14 minutes or till the edges turn brown. IMG20170912093110
