Nutty Orange Cake with Coconut Sugar

Last week I made this gorgeous and Healthy cake for a client on demand with 100% whole wheat flour and all natural Coconut Sugar. The cake came out awesome with fresh orange juice and coconut sugar  giving it a perfect distinct aroma of goodness.😍

I kept it minimally decorated to keep the natural beauty factor. The cake has just right ratio of nuts in it and is decorated with almond flakes.

Ingredients:

  • 1 & ½ cup whole wheat flour
  • ¾ cup Coconut Sugar
  • ½ cup curd
  • ½ cup orange juice(fresh preferred)
  • 1/4 cup oil
  • 1 tsp orange zest
  • ½ tsp vanilla extract
  • 1 tsp baking powder
  • ½ tsp baking soda
  • A pinch of salt
  • 100 grams of your favorite chopped nuts
  • 50 grams dark chocolate
  • 35 grams Almond flakes for decoration

Process:

  • Switch on the oven for preheating at 160 degrees
  • In a bowl sieve together flour, baking powder, baking soda and saltIMG20180103072922
  • Add chopped nuts to it and mix, keep aside

  • When curd and sugar are mixed properly add oil, vanilla extract, orange zest and orange juice to it and mix well till smooth
  • Now add this liquid mix to the flour mixture and make a lump free batter, do not over mix, just few strokes to make it evenIMG20180103073152
  • Line the baking pan with some parchment and pour the batter over it to fill up to a little more than half level
  • Bake in a preheated oven at 160 degrees for 30-35 minutes or till the toothpick inserted comes out clean
  • Let the cake cool completely and then decorate with some melted chocolate and almond flakes the way you like 🤗
