Baked Coconut Cottage Cheese Sticks

Recently, I came across a very popular recipe of Baked Coconut Shrimp and then I thought why should only Non Vegetarians have all the fun? I decided to give it my twist and make long Sticks of our Desi Paneer (Cottage Cheese) with lots of coconut. I have especially used coconut oil for giving it additional flavor. I served these Baked Coconut Paneer Sticks with my special “Crushed Pineapple Sauce made in Coconut Sugar

Desiccated coconut on top of sticks is not only a flavoring agent but it gives a super crisp texture to the sticks. They came out very well and nicely done.

You can prepare them as an appetizer or snack; they are so quick and not much tricky or messy. You can prepare them in a jiffy. Here comes the recipe:

Ingredients:

  • 200 grams cottage cheese(paneer) cut in long sticks
  • 1 cup desiccated coconut(dry)
  • ¼ cup whole wheat flour
  • ½ tsp cumin powder
  • ½ tsp garam masala powder(all spice mix)
  • Salt to taste
  • Crushed black pepper to taste
  • 2-3 tbsp Coconut oil

Process:

  • Cut the cottage cheese in long sticks and marinate with some salt and pepper and keep asideIMG20180120202339.jpg
  • Take two bowls, in one add wheat flour, salt, pepper, cumin powder and garam masala powder. Mix these well and add some water to make a slurry
  • In another bowl take desiccated coconut mix some salt with it
  • Take the paneer sticks one by one and dip in slurry first and then coconut. Make sure coconut is all over the stick, this is going to give it the crisp texture
  • Line them on a baking tray greased with coconut oil. Drizzle more coconut oil on themIMG20180120203800.jpg
  • Bake in a preheated oven at 200 degrees for 10 minutes then turn over and again bake for 10 minutes or until they are crisp goldenIMG20180120210715.jpg

Serve with your favorite sauce or chutney. I served them with a special Crushed Pineapple Sauce made in Coconut Sugar.
