Thandai Cheesecake Shots

This Holi I served my Thandai in style in form of these no bake and easy to assemble cheesecake shots. The flavor is yum with use of homemade Thandai paste and lots of saffron 😉 We gobbled two shots at a time 😉

  • 10-12 digestive biscuits
  • 1 tbsp butter
  • ½ cup milk powder
  • ¼ cup homemade crumbled paneer
  • ½ cup sugar
  • 1 cup chilled fresh cream
  • 1 tsp saffron, mixed with 2 tbsp warm milk
  • 2 tbsp thandai paste/powder
  • Pistachio and almond slivers for garnishing

  • Crush the digestive biscuits well either with a rolling pin or in a mixer jar, mix 1 tbsp melted butter in it and set this mix at the bottom of shot glasses
  • In a mixer jar combine paneer, milk powder and sugar and 2 tbsp hot water and blend till everything is mixed
  • Add thandai paste and blend again to a smooth mixture. If needed add a little more hot water to make it like condensed milkIMG20180303164630.jpg
  • In another bowl whip up the fresh cream till it is very light and forms soft peaks, and then add saffron mixture to it and mix again
  • Mix the prepared thandai mixture with this whipping cream lightly and mix wellIMG20180303165857.jpg
  • Now put this mixture in a piping bag and pipe in shot glasses and decorate with pistachio and almond slivers
  • Let it chill for at least 3-4 hours before you serve

Holi is just an occasion enjoy this goodness any day for dessert  😉
